Sabatier K chef's knives. 'Antique carbon 'Canadian' plus Stainless

I have four of the Sabatier K Carbone range of knives that were produced some years ago as a limited range using rediscovered forgings for the Canadian market. They are now, mostly no longer available.

I purchased them all direct from the manufacturer in Thiers.

Two of them are carbon steel (10'' and 6'') and two are Stainless (7'' and 6'')

The 10'' has some light surface corrosion marks which would polish out. Very sharp at the heel but a little less so towards the tip.

Has a nice blackwood handle and brass rivets

The 6'' carbon is lightly used, has a good edge and faint discolouration only.

The handle is also blackwood but paler in colour.

I did contact the factory about this colour difference but, with a 'Gallic shrug', was told it is what it is.

They couldn't guarantee matching handles. It has it's own character which is attractive.

The remaining two knives are Stainless steel and therefore unmarked.

The 6'' has a quite thin, flexible blade while the 7'' is thicker at the bolster and more rigid.

Both have Blackwood handles and brass rivets.
